6cansGreat Northern beans15-ounce cans, drained and rinsed
6slicesbacon
1large onionchopped
1 1/4cupsSweet Baby Ray's BBQ Sauceor your favorite BBQ sauce
3/4cupGuinness beeror beef broth
1/4cuplight molasses
3tablespoonschipotle chilies in adobo sauceminced
3tablespoonsDijon mustard
3tablespoonsdark brown sugar
2tablespoonsWorcestershire sauce
1tablespoonsoy sauce
Instructions
Preheat the oven to 350 degrees Fahrenheit.
In a large pan, cook the bacon until crispy, then drain the bacon slices on a paper towel.
Transfer 2 tablespoons of the bacon drippings into a large mixing bowl. Then dice the bacon and add it to the bowl as well.
Add the onion, BBQ sauce, Guinness, molasses, Dijon mustard, brown sugar, Worcestershire sauce, and soy sauce to the bowl. Stir to blend completely.
Add in the chipotle chilies and Great Northern beans. Stir to blend.
Place the mix into a large baking dish, then bake uncovered for 1 hour to allow the sauce to thicken.
Remove the baking dish from the oven and allow the baked beans to cool for 5 minutes.
Serve immediately.
Notes
Drain and rinse the beans, so the sauce sets the final thickness.About a quarter of the beer’s alcohol is still there after an hour of baking, per USDA figures. Use beef broth or a non-alcoholic stout to skip it.For a milder pot, use 1 to 2 tablespoons of chipotle and add 1 teaspoon of smoked paprika.
