Spicy Jalapeño Mojito

A classic mojito with a kick: jalapeño wheels muddled with fresh mint, lime and sugar, then topped with white rum, club soda and plenty of ice.

Ingredients

  • 3 jalapeño wheels thinly sliced, seeds in
  • 1/2 lime cut into 4 wedges
  • 10 fresh mint leaves plus a sprig for garnish
  • 2 teaspoons sugar plus more to taste
  • 1.5 ounces white rum
  • 1/2 cup club soda

Instructions

  • In a sturdy highball glass, add the jalapeño wheels, mint leaves and 1 lime wedge. Press down with a muddler a few times to bruise the mint and crush the jalapeño. Press gently, without shredding the mint.
  • Add two more lime wedges and the sugar, and muddle again to squeeze out the lime juice and help the sugar dissolve. Fill the glass with ice.
  • Pour in the rum, top with the club soda and stir gently to combine.
  • Taste, and stir in a little more sugar if you like it sweeter. Garnish with the mint sprig, the last lime wedge or an extra jalapeño wheel, and serve.

Notes

For a milder drink, use 2 wheels or remove the seeds and pale ribs before muddling. For more heat, add another wheel.
Superfine sugar dissolves faster than regular granulated sugar. You can also use 1/2 ounce of simple syrup in place of the sugar.
