Ingredients

  • 1 package cream cheese 8 ounces, cut into cubes
  • 1 to 2 cups salsa half to a full 16-ounce jar, as spicy as you like
  • 1 jalapeño pepper optional, seeded and finely diced
  • fresh cilantro optional, chopped

Instructions

  • Put the cubed cream cheese in a microwave-safe bowl and pour the salsa over it. Use 1 cup for a thick, scoopable dip, or up to 2 cups for a looser one.
  • Microwave on high for 1 minute, then stir. Keep heating in 30-second bursts, stirring each time, until the cream cheese has melted and the dip is smooth and hot, about 2 to 3 minutes total.
  • Stir in the diced jalapeño (or serrano), if using.
  • Top with chopped cilantro if you like, and serve warm with tortilla chips.

Notes

You can opt for an even hotter fresh chili pepper if you want your dip to be the spiciest possible.
No microwave? Warm the cream cheese and salsa together in a small saucepan over low heat, stirring often, until smooth.
The dip thickens as it cools. Reheat it gently in short bursts, stirring, with a splash of salsa if it needs loosening. Refrigerate leftovers and use them within 3 to 4 days.
