Guajillo peppers are well-loved for their smokiness and tea-like sweetness, and it’s these two flavors that make it such an excellent salsa pepper. Here mixed with tomatillo, this guajillo salsa has a sweet tang with a trailing smoke. It’s excellent finely blended and served with tortilla chips, or try it as a salsa topping for burritos or enchiladas.
Guajillo Salsa
Ingredients
- 6 guajillo chilies
- 12 tomatillos husks removed and roughly chopped
- 2 cloves garlic
- 1/2 white onion
- 1 teaspoon salt
Instructions
- In a pan, simmer over low heat the guajillo peppers and tomatillos for approximately 10 minutes.
- Remove the chilies and tomatillos from the water and place them in a blender, along with the garlic, onion, and salt.
- Pulse blend until you reach your desired salsa consistency.
