Guajillo Salsa

Guajillo peppers are well-loved for their smokiness and tea-like sweetness, and it’s these two flavors that make it such an excellent salsa pepper. Here mixed with tomatillo, this guajillo salsa has a sweet tang with a trailing smoke. It’s excellent finely blended and served with tortilla chips, or try it as a salsa topping for burritos or enchiladas.

Ingredients
  

  • 6 guajillo chilies
  • 12 tomatillos husks removed and roughly chopped
  • 2 cloves garlic
  • 1/2 white onion
  • 1 teaspoon salt

Instructions
 

  • In a pan, simmer over low heat the guajillo peppers and tomatillos for approximately 10 minutes.
  • Remove the chilies and tomatillos from the water and place them in a blender, along with the garlic, onion, and salt.
  • Pulse blend until you reach your desired salsa consistency.
