Delicious with fried food…
We love the aji amarillo for its sunny, bright flavor and its unexpected heat. It’s a flavor that goes far. In fact, adding just a touch of aji amarillo paste (or aji amarillo powder if you prefer) to a little mayonnaise creates a delicious dipping sauce that’s perfect as an alternative to tomato-based cocktail sauces for fried foods. Aji Amarillo Aioli
Ingredients
- 1 cup mayonnaise
- 2 to 3 tablespoons aji amarillo paste or aji amarillo powder
- 2 tablespoons lime juice
- 1 tablespoon flat-leaf parsley minced
- 1/2 teaspoon salt
Instructions
- Add all ingredients to a mixing bowl, then stir to fully combine.
- Serve immediately, or for best flavor allow the aioli to chill for 2 to 4 hours prior to serving to allow the flavors to meld together.
Notes
If you prefer to use aji amarillo powder, start with 1 to 2 tablespoons and add more to taste.
