Aji Amarillo Aioli

Delicious with fried food…

We love the aji amarillo for its sunny, bright flavor and its unexpected heat. It’s a flavor that goes far. In fact, adding just a touch of aji amarillo paste (or aji amarillo powder if you prefer) to a little mayonnaise creates a delicious dipping sauce that’s perfect as an alternative to tomato-based cocktail sauces for fried foods. Try it with fried shrimp or simply with fries – really anything in-between. Aji Amarillo Aioli

Ingredients
  

  • 1 cup mayonnaise
  • 2 to 3 tablespoons aji amarillo paste or aji amarillo powder
  • 2 tablespoons lime juice
  • 1 tablespoon flat-leaf parsley minced
  • 1/2 teaspoon salt

Instructions
 

  • Add all ingredients to a mixing bowl, then stir to fully combine. 
  • Serve immediately, or for best flavor allow the aioli to chill for 2 to 4 hours prior to serving to allow the flavors to meld together.

Notes

If you prefer to use aji amarillo powder, start with 1 to 2 tablespoons and add more to taste.
