Easy JalapeƱo Dip

Our easy jalapeƱo dip recipe is so simple to make and delivers totally on taste. The jalapeƱo peppers provide a nice mild to medium heat – just enough oomph to make the dip special, but not enough to scare off those who prefer milder fair. This is a dip that’s perfect for parties. Serve with tortilla chips, crackers, and/or vegetable cruditĆ©s, and you’re off to the races.

Flavor notes

Baking changes the jalapeƱos. Raw, they taste sharp and grassy. Twenty minutes in the oven and they go soft and mellow, and the flavor spreads out into the cheese instead of sitting in one spot. The heat sticks around, since capsaicin doesn’t cook off, but it’s gentler this way. That’s how two peppers can flavor sixteen servings without anyone breaking a sweat.

The canned green chilies aren’t there for heat. They’re barely spicy at all. What they add is soft chili flavor right through the dip, which the two fresh peppers can’t do on their own. Use both and you get bite from one and body from the other.

Don’t skip the breadcrumb topping. Panko, Parmesan, and butter brown up in the oven and give you something crunchy over all that soft cheese. Small thing, big difference.

Adaptation ideas

  • Use serranos instead: If you want to increase the heat, you can opt for serrano peppers instead of the jalapeƱos. This kicks it up to twice the spice, easily, and the dip still tastes about the same. Serranos run 10,000 to 23,000 Scoville heat units and jalapeƱos run 2,500 to 8,000.
  • Leave the seeds in: Want it hotter without switching peppers? Leave in the seeds and the white pith. That’s where most of the heat is.
  • Drain the can, or don’t: The can comes with a fair bit of liquid. Leave it in for a softer dip.
  • Add pickled jalapeƱos: A spoonful of chopped pickled jalapeƱos adds a little vinegar tang, which is nice against all that richness.
  • Change up the cheese: Sharp cheddar makes it punchier. Pepper jack adds more heat. A little smoked gouda takes it somewhere else entirely.
  • Make it ahead: Mix the dip and spread it in the dish a day early, then cover and refrigerate. Add the topping right before it goes in the oven so it stays crisp.

Serving ideas

  • Tortilla chips: The go-to. Use sturdy ones – this is a thick dip and thin chips snap in it.
  • Crackers and veggie sticks: Celery and bell pepper are great against something this rich.
  • Right out of the baking dish: Serve it in what you baked it in, while the top is still crisp. It’s best in the first twenty minutes.
  • On a burger or a hot dog: A spoonful instead of cheese sauce. Really good.
  • Over a baked potato: A big scoop and you’ve got lunch.

Storage notes

Leftovers keep three or four days in the fridge, covered. Reheat them in the oven at 350°F for ten or fifteen minutes. The microwave works too, but you’ll lose the crunchy top.

This is a great make-ahead. Mix the dip and spread it in the dish the day before, cover it, and leave it in the fridge. Mix the topping separately and scatter it on right before baking. Give it a few extra minutes in the oven since it’s starting cold.

Don’t freeze it. There’s mayo in here, and mayo splits when it thaws. You’ll end up with a grainy, watery mess and no way to fix it.

Ingredients
 
 

  • 2 packages cream cheese 16 total ounces
  • 2 jalapeƱo peppers finely diced
  • 1 can diced green chilies 4 ounces, liquid removed
  • 1 cup mayonnaise
  • 1 cup shredded Mexican cheese Cheddar & Monterey Jack mix
  • 1 cup Parmesan cheese 1/2 for dip, 1/2 for topping
  • 1 cup Panko breadcrumbs
  • 1/4 cup melted butter

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit.
  • In a bowl combine the cream cheese, mayonnaise, Mexican cheese, Parmesan, jalapeƱo peppers, and canned green chilies.
  • Use a food processor to blend the ingredients to a chunky, yet smooth dip texture.
  • Grease a casserole dish and then spread the dip evenly within it.
  • In a separate bowl, combine the breadcrumbs, the second 1/2 cup of Parmesan cheese, and the melted butter.
  • Sprinkle the breadcrumb mix evenly across the dip.
  • Bake the dip for 20 minutes or until the breadcrumb topping is browned.
