All it takes is five minutes (and, if you want, a little chilling time) to take an ordinary condiment like mayonnaise and turn it into something more special. And a little more spiced, too. Old Bay aioli supplies a ton of extra flavor and, of course, that extra Old Bay warmth as well.
It’s an excellent dipping sauce to serve with crab cakes (it is a crab seasoning, after all), but really any fried seafood works. Try it with french fries, too. The Old Bay warmth really adds flair to the table as a fry dipper. Use it, too, as a sandwich spread, particularly for fish sandwiches.
Old Bay seasoning contains paprika among its many herbs and spices, so there is a mild warmth to it. But it’s not truly “spicy”. If you’d like this aioli to kick things up a notch, add a pinch of cayenne powder. Cayenne has a no-doubt upper-medium heat, so start small, taste, and add more to taste. It’s relatively neutral in taste, so it won’t impact the delicious Old Bay flavor one bit.
