Spicy Baked Eggs with Beans
Ingredients
- 1 tablespoon olive oil
- 1 onion chopped
- 1 zucchini small, chopped
- 2 teaspoons cayenne pepper powder
- 2 tomatoes chopped
- 1 cup tomato puree
- 1 cup cooked beans choose you favorite cooked bean
- 4-6 eggs
- 1/2 teaspoon salt or to taste
- 1/2 teaspoon black pepper or to taste
Instructions
- Pre-heat the oven to 350 degrees Fahrenheit.
- In a small frying pan heat the olive oil over medium heat.
- Fry the chopped onion and zucchini in the pan for 10 minutes, stirring occasionally to avoid sticking,
- Add the cayenne pepper powder, tomatoes, and tomato puree and cook until warmed through.
- Add the cooked beans to the bottom of a casserole dish. Then spread the tomato mixture On top.
- Break the eggs directly on top of the dish and bake in the center of the oven for 15 minutes.
- Serve immediately.
